Looking for a recipe to Stalders Delicatessen mustard?

Hello, I have tried and tried to look for a recipe for a mustard that was served at Stalders Delicatessen that used to be on Pike Street Between 5th and 6th in Seattle back in the 40's and 50's. If you know any kinds of mustards that might be similar to it or a terrific recipe for mustard, I would be happy to accept that too. Thanks!!!

I've never been to Stalders Deli, I'm afraid. But I do have a great recipe. This is my favorite mustard. 1 cup Dark beer 1/2 cup Cider vinegar 2 tb Brown mustard seeds 2 tb Dry mustard 1/4 cup Brown sugar 1 ts Salt 1/4 ts White pepper 2 Shallots; minced 2 Egg yolks 2 tb Butter; melted Blend ingredients in a blender or food processor. Spoon mixture into the top of a double boiler. Cook over simmering (not boiling) water until thickened and steaming, about 10 minutes, whisking often to prevent curdling. Let cool to room temperature, then chill overnight. Serve as a condiment for meats and deli sandwiches. Mustard keeps, refrigerated, in a tightly sealed container for up to 2 weeks.

Beer does range from just under 4% to around 8%, generally speaking. Typical Bud Light beer carries 4.2-4.5%, therefore with some simple math, you would need to drink 4-4.5 oz. of whiskey to equal 40 ounces of Bud Light-style beer.

How do I sharpen my meat slicing machine?

I work in a delicatessen. Our meat slicer hasn't been sharpened for about a year. It's an Omas C35E, and has a built-in sharpening mechanism on top. I'm pretty sure I know how it works - it has 2 grinding stones which you squeeze together on the blade - but the machine cost about £800 so I don't just want to have a go at it, not really knowing what I'm doing and break it. Adjust the slicer to zero thickness and remove the guard. The two stones will tip toward the blades and then there will be a device to bring the stones closer together or you push the stones onto the blade. Spray both sides of the blade with some cooking spray. Turn the motor on and apply the stones onto the blade as it runs. Just use a light amount of pressure on the stones and be very careful since you will be using the slicer with the guard off. Do not sharpen for more than a minute. Unplug the slicer and wipe down thoroughly wearing a safety glove. We use to sharpen our slicer about once a week and never did any harm to it.

Its really just finely diced pepperoni, onion, peppers in a light vinigarette. Other things can go in like chopped basil, chopped parsley, chopped celery or chopped artichoke.
