Hi, I need to make a cold storage to ferment my homebrew and wines. Can anyone recommend a good book on the subject of cold storages? Thanks. Note - The temperature where I live is 30 degrees celsius, so yes I need some sort of air conditioning to get a more ideal temperature for fermentation (around 20 degrees).

If you can do the carpentry, you probably don't need a book. The best site is an unheated basement but a closet can be substituted. Essentially, you build a small room and insulate it well. Add a window air conditioner in one wall. Remember that the outside portion will drip, so you need a receptacle for the water. Aren't you going to want to get the temperature down below 20 deg. C for proper fermenting, though? I'm planning on doing something similar if I can find the right house.

Cold storage retards deterioration of food rather than stops it altogether. although for most practical purposes this is OK, the taste and texture of food is eventually damaged and the eating qualities affected. Not all food freezes successfully - some foods are affected by the anomalous expansion of water (the peculiar property of water in that it occupies more space when frozen than when liquid). All this freezing capability comes at a cost - fridges use energy and produce surplus heat. (Until recently they were made of not very eco-friendly materials). The expenditure on energy has to be balanced against the potential waste of food which might otherwise spoil (notwithstanding this can be readily reused as compost).

38-40 degrees, wrap in plastic wrap to prevent against cold burns (it makes a bitter smell).

how long does it take for a new refrigerator/freezer to get cold enough for food storage?

I am replacing my old refrigerator/freezer. When the new one is delivered, do I need to place my refrigerator/freezer contents in some sort of transition cold storage (eg. a neighbor's freezer) while waiting for the new appliance to reach the right temperature?

You should leave it for at least 24hrs to make sure its ok and it to settle. Just put a ice tray in wen you think it might be ready when the ice freezes you know its ready simple.

Polystyrene panel used in cold storage possess great fire hazard. I would like to know if there is any other alternative to this panel. or if there is any additive that can be used to enhance the fire resistance period of exisiting polystyrene panel in the building.

Try removing all the Polystyrene boards and replace with Urethane foam injected directly into the empty place left from the Polystyrene, after it dries will work better and safer.
